Salsa chicken in crock pot

Heather Anderson is a soon-to-graduate senior at Princeton High School, and also a semester away from receiving an associate of arts degree from Anoka-Ramsey Community College. Once finished with the college semester, her plans are to enter the U.S. Air Force, where she would like to work in either personnel or linguistics.

Anderson enjoys spending time with friends, working in the high school FFA chapter, reading, board games, public speaking, dancing, fishing and baking. Anderson said she loves having attended school here, and notes that her father Brad and grandma Lois graduated from PHS.



2 to 3 lbs. chicken breasts (can be frozen)

16 oz. jar salsa

1 to 2 cans cream of chicken soup

1 pkg. taco seasoning


Place chicken pieces in crock-pot and sprinkle taco seasoning over top. Mix the salsa and chicken soup and pour that over the top of chicken in crock-pot. Cook on high for 7-8 hours if chicken is frozen, or 4-6 hours if it is not.

Serve over rice.
