Recipe: Honey Sauced Chicken

Princeton native Aaron Oliver and his wife Dyan, who grew up in Coon Rapids, have their home in Coon Rapids and work in Princeton.
The two are mortgage and refinancing consultants in the Princeton office of American Mortgage Equity Consultants. The couple also own and operate the Bright Child Child Development Center, which opened in 2010.recipe olivers
Aaron and Dyan met at a Wells Fargo office in Minneapolis when they were working there in 2007 and married the next year. Their honeymoon was in Kenya, Tanzania and Zanzibar. While in Africa they attempted to climb famous Mt. Kilamanjaro. During the ascent, Dyan became ill about three-fourths of the way up and was assisted down by medical personnel. Aaron was farther up the mountain but cut the journey short to get back down to Dyan.
Both like traveling and spending time with their 4-year-old twins Natalie and Olivia, and son Emmett, 2. The couple also like movies and are season ticket holders to the Minnesota Twins. Aaron likes golfing, cooking and classic cars. The couple has the 1946 Ford that Dyan’s grandfather bought for her great-grandfather.

3/4 lb. chicken
1/2 tsp. salt
1/4 tsp. black pepper
1/2 cup honey
1/4 cup soy sauce
1/8 cup chopped onion
1/8 cup ketchup
1 T vegetable oil
1 minced clove of garlic
1/4 tsp. red pepper flakes

Season both sides of chicken with salt and pepper and place in slow cooker. In small bowl, combine the honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes and pour over the chicken. Cook on low for 3 hours. Cut chicken into bite-size pieces, then return to pot and toss with sauce. Serve over rice.
