Recipe: Avocado Strawberry Spinach Salad with Poppy Seed Dressing

Salad ingredients:
6 cups fresh baby spinach
1 pint strawberries, hulled and sliced
1 avocado, diced (or you can double this to 2 avocados)
4 ounces crumbled gorgonzola or blue cheese
1/4 cup sliced almonds, toasted
half a small red onion, thinly sliced

Toss all ingredients together with your desired amount
of dressing until combined. Serve immediately.

Poppyseed dressing ingredients:
1/2 cup avocado oil (or any oil, such as olive oil)
3 Tablespoons apple cider vinegar
2 Tbsp. honey
1 Tbsp. poppy seeds
pinch of ground dry mustard (optional)
Himalayan salt and pepper

Whisk all ingredients together until combined.

I am still thinking of all the recipes I could have made if I would have been able to bring that big bag of avocados home from Guatemala. So this week I am sharing another recipe with avocados.
If you have been avoiding avocados because of their bad rap for being high in fat content, please realize that the fats are good fats needed to process the fat soluble vitamins A, E, D and K. Avocados also have plenty of antioxidants, primarily carotenoids found in the deep green part of the flesh, closest to the peel. Avocados are an amazing heart-healthy food.
I made my scrapbook of memories from our latest mission trip and was able to summarize some of the miraculous things our team did under the direction of God.
A young mother brought us her little boy, 14-month -old Jefferson whose eyes were crossed, causing difficulty with his vision and also his appearance. We were so blessed on this particular team to have a group of eye surgeons and their surgical staff. They did many cataracts and eye lesion removals. But the miracle happens in that one of the surgeon’s specialty was working with children and being able to fix eyes of children like Jefferson. She was able to straighten Jefferson’s eyes and the next day he was on his way home, to the highlands of Guatemala, completely healed, with his parents. The mother and father were so grateful, with tears in their eyes they thanked the surgeon and gave her a pair of little pants; these were not just any pants but native pants worn in their area of the highlands. What a beautiful gift for the surgeon to remember Jefferson by, but even more so, what a gift from God to provide the surgeon and team capable of caring for Jefferson at the time that his parents brought him in for care. A divine appointment indeed!
