Recipe: Summertime broccoli salad

Carli Thompson is glass office manager at ABRA Auto Body and Glass business in Princeton, meaning she handles the accounts for windshields and windows. She has worked for ABRA for nine years, with the last two in her current position.

Thompson is originally from Princeton. She enjoys her dog Saul, a cross between a pug and a beagle known as a puggle, baking, cooking, acrylic painting, and spending time with her fiance Shaine, who she knew in her class at Princeton High School. The two graduated from there in 2005 and are now planning to wed this summer in Duluth.

The two selected Duluth for exchanging vows because both like it and want the wedding spot to be like a destination that day for the guests. Thompson said that all the basics are planned including that the bridesmaids’ dresses will be yellow. Just smaller details are left to be done, she said.

Thompson adds that she likes baking and cooking so much that she almost enrolled in a school to become a chef. She first learned culinary skills from her grandmother Sharon and mother Shelly.recipe



2 crowns broccoli

1/2 crown cauliflower

1 1/2 cups shredded cheddar cheese

1/2 cup cooked and crumbled bacon

1/4 cup finely-chopped red onion


1 cup mayo

1 cup Miracle Whip

1/2 cup sugar

1/4 cup grated Parmesan cheese

salt and pepper to taste



Toss together the broccoli, cauliflower, cheese,  bacon, and onion. Set aside. Mix the dressing ingredients. Pour over salad ingredients. Chill at least two hours before serving.
