Recipe: Fresh Cream of Asparagus Soup

Fresh Cream of Asparagus Soup

2 cups of cut-up asparagus, parboiled for 8 minutes
1 can Campbell’s cream of asparagus soup
1 can of milk
1/4 cup of margarine

Boil the fresh or frozen asparagus of 8 minutes. In a separate pan heat the soup, milk an margarine. Add the cooked asparagus and enjoy with a slice of fresh homemade bread.

A couple of weeks ago, I heard someone complaining about a business in Milaca. This person said, “There are no good deals in Milaca; that is why I shop elsewhere.” I did my homework and found out that this person had been quoted one price and charged another. That was very unfortunate! But this got me thinking of all the reasons I love Milaca.
I have lived in Milaca for 36 years and can think of no better place in the world to raise my family. If I were to tell you all the individuals and groups who have helped Chuck and I raise our seven children, I would have to write a book. But I will give you a sampling of reasons why today I love Milaca.
We live close enough to the country so you can get fresh vegetables (asparagus) from the fruit and vegetable farmers.
We get 20 percent off on Wednesdays at one of the local pharmacies.
We still have a full service gas station, where they fill your tank, wash your windshield and check your oil.
Summers are filled with music: Milaca High School and intermediate bands practicing on the streets in the mornings, music in the band shell in the evenings and street dance downtown during the Milaca Festival.
We live close enough to the Twin Cities to go in for a play or ball game in the evenings.
On Friday evenings you can go to the local Legion and have a great dinner while visiting with veterans who served this country.
You can walk the streets of Milaca without fear of getting assaulted. Many people walk my street every day.
The local police care about us and our families. One of my children was having a bad spot in their lives and one of the police officers stopped over weekly and checked in on him while they did their patrolling.
We have beautiful parks. This past weekend saw a wedding party getting beautiful photos taken at the south River park. Out of town guests always talk of how beautiful our parks are.
The small town friendliness and cooperative spirit prevails; my hairdresser not only does my hair but she also watches our dogs when we go away on the weekend. And my husband does day care for her little boy.
We have many car repair options, where you can have your car maintenance, paint repairs and even car detailing done.
I could go on and on, but I will finish with a little story.
This past Saturday night, I was coming back into Milaca after working at the hospital all day. There was a car with out-of-state license plates going very, very slow on Central Avenue. I slowed and followed them around the corner and rolled down my window, I said with pride, “I live in Milaca; is there anything I can help you with?”
They explained they were looking for a place to get a good burger for dinner. I told them, back one block you can get an amazing burger at that bar and grill. They were so thankful. Another reason to love Milaca, they have half-priced burgers on Thursday nights.
Earlier in my article I mentioned asparagus. This spring we bought 8 pounds of asparagus from a local vegetable farmer and froze it so Chuck can make me cream of asparagus soup for the weeks and months ahead. This a real treat for me and I thought I would share with you how he makes it. Recognize that this is not a low-fat soup, even though it is made with asparagus, but it is delicious.
